Monday — so back to the early AM routine! I made a big egg scramble with mushrooms and sausage crumbles (left over from pizza night) with toast.
For lunch, 5 y.o., Bill & I had guacamole, Triscuits, and slices of cheddar cheese. “Thank you for the yummy lunch, Mommy,” from the 5 y.o. Can’t recall hearing that before! Great avocados from The Co-op right now.
Before the big boys got home from school I made batch of these whole wheat brownies while the kids were at school. A note on the recipe, I use honey (not maple syrup) and I use 2 eggs (rather than 1). I thought the boys would enjoy making frosting to put on them when they got home. While organizing my baking supplies, I spotted this “Healthy Cake Frosting” recipe on the back of my bag of Organic Valley Organic Nonfat Dry Milk. I didn’t think we would be eating frosting again any time soon, so I was thrilled to stumble across it.
- 1 c. Organic Valley nonfat dry milk
- 1 stick (1/4 lb) organic butter, unsalted
- 1/4 c. honey
- 1 t. vanilla
- 1 T. water
- Mix ingredients together with an electric mixer. Adjust as desired for a stiffer or sweeter frosting. Add juice concentrate, preserves, cocoa, or carob for other flavors.
I just did the straight vanilla version — more of a buttercream flavor — but plan to experiment with cocoa, peanut butter, and unsweetened coconut. The three of them enjoyed it slathered on the dark chocolate brownies with a cold glasses of whole, organic milk. They aren’t exactly suffering, are they?
Dinner: I’ve been wanting to try this chicken teriyaki recipe from goop.com. You know, Gwyneth Paltrow’s website — despite the odd name, I do find it addictive and lots of the recipes look good — this is the first I’ve tried. I used local chicken breasts, pan sautéed rather than grilled, and reserved more of the sauce than recommended to cook down into a nice dipping sauce for the kids. This was really well-received by kids and grownups and surprisingly easy. Served the chicken up with steamed fresh organic broccoli, brown rice, and this delicious soy sauce — Eden Selected Shoyu Soy Sauce — that we all agreed is the best soy sauce we’ve ever tasted.
